Fresh tomatoes are a key ingredient in this easy homemade salsa.  In addition, jalapeño, onion, cilantro, garlic and lime really give the salsa a special flavor.  You can easily cut out things like onion and garlic if you have a sensitivity or allergy to them, and add extra seasoning like chili powder, cayenne pepper, or salt if you’d like.

You can even roast your vegetables to give your salsa a smoky flavor, but it isn’t necessary if you’re in a rush.

Throw your igrendeints into your Vitamix and pulse it on speeds 1 and 2 until it reaches your favorite salsa consistency.  No Vitamix?  No problem, a blender or food processor will work too!

Simple Vitamix Salsa Recipe

This is a great, simple Vitamix salsa recipe that can be customized to suit your tastes!

Equipment

  • Vitamix (or blender or food processor)

Ingredients
  

  • 1 lb ripe Roma tomatoes about 3-4
  • 1 14.5 oz can petite diced tomatoes
  • 1/3 cup chopped red onion about 1/4 of a medium onion
  • 1 jalapeno pepper seeded and roughly chopped
  • 1/3 cup fresh cilantro
  • 1 large clove garlic
  • 2 Tbsp fresh lime juice about one lime
  • 1/2 tsp chili powder
  • 1/2 tsp cayenne pepper optional
  • Salt and pepper to taste

Instructions
 

  • Simply combine all ingredients in your Vitamix, and pulse on speed 1-2 until all ingredients are finely chopped and you have reached your desired consistency.
  • Serve with tortilla chips, or your favorite mexican food. This is also great on top of baked potatoes!
  • For EXTRA flavor:
  • Place tomatoes, sliced in half, onions, garlic clove and jalapeño on foil covered baking sheet. Drizzle with olive oil and fresh cracked sea salt.
  • Roast for 20 min, flipping over half way) in a 450 degree oven, long enough for the tomatoes to blister and even char slightly.
  • Make sure you taste the salsa before adding additional salt after roasting

Notes

For best results: Store in fridge for a few hours before serving so that flavors have time to marinate.
