Gluten Free Vegan Chocolate Crinkle Cookies
I’ve been making cake mix cookies since well, forever. When you use chocolate cake mix, some people call them chocolate crinkle cookies. These gluten free vegan chocolate crinkle cookies are always a crowd pleaser, and no one will ever catch them as gluten free or dairy free or vegan!
Chocolate Cake Mix Cookies, No Eggs!
What makes these King Arthur Gluten-Free chocolate crinkle cookies really special is there aren’t any eggs in them at all. If you look at the King Arthur Gluten-Free chocolate cake mix, the box calls for three eggs. Not great if you are vegan or have an egg allergy.
I’ve swapped the eggs for some sweet potato and a little bit of baking powder. I love sweet potato as an egg replacement in baked goods, especially pancakes. It’s something a little different and works very well.
When you make these eggless cake mix cookies, you do need a little bit more than just sweet potato. I add just a half of a teaspoon of baking powder to help act as an emulsifier. It works well because these eggless cake mix cookies are indistinguishable from their egg full counterparts, and are also dairy free, vegan, and gluten free.

Gluten Free Chocolate Cake Mix Cookies, Dairy Free, and Vegan too!
The other secret to this gluten free cake mix cookies is of course a box of King Arthur Gluten Free Chocolate Cake Mix. I use King Arthur Gluten Free for well, everything. I started baking with King Arthur almost seven years ago, and never went back to anything else.
The King Arthur Gluten-Free cake mix cookies did not survive long in my house at all. Did I mention no one could tell they were gluten free?
How to Make Cookies from Cake Mix
It couldn’t be easier to make cookies from cake mix, but there are a couple of things to know going in.
- You will use dramatically less liquid than you would if you were making cake mix
- You should refrigerate the dough for half an hour before baking them to make them easier to mold
- They will flatten out after you remove them from the oven.
My vegan cake mix cookies require just a few simple ingredients:
- King Arthur Gluten-Free Chocolate Cake Mix
- 1/2 cup sweet potato
- 1/3 cup canola oil (or your other favorite baking oil)
- 1/2 teaspoon baking powder
- 3 Tablespoons water
- Powdered sugar for rolling, about 1 cup
First things first, the sweet potato, oil, and baking powder need a good beating together.
Then, add the cake mix and mix mix mix. You’ll be thinking that these dairy free cake mix cookies aren’t going to work out, but I promise they do.
Then, add 3 Tablespoons of water 1 tablespoon at a time, mixing in between.
When the dough is crumbly, it is ready. Be sure you can shape it into a ball like this:
Next, refrigerate for half an hour.
The secret to these cookies is rolling them twice in powdered sugar. Start by rolling them into balls, then coating in powdered sugar. Make a second trip around, and coat them twice.
Then, simply place them on a baking sheet, and bake for 10 minutes.
After they come out of the oven, they will flatten out a bit more, and you are ready to enjoy them.
These come together so quick and easy, and are a favorite at our house for just about every occasion.

Gluten Free Chocolate Cake Mix Cookies {Dairy Free, Vegan}
These gluten free chocolate cake mix cookies couldn't be easier to make, and they are also dairy free and vegan. I used sweet potato instead of eggs so these eggless cake mix cookies even have vegetanles hidden in them!
Ingredients
- 1 Box King Arthur Gluten Free Chocolate Cake Mix
- 1/2 Cup mashed sweet potato
- 1/2 Teaspoon baking powder
- 1/3 Cup Canola Oil
- 3 Tablespoons water
Instructions
- Beat sweet potato, oil, and baking powder together with an electric mixer. Not all oil will be absorbed, this is expected.
- Add one box of King Arthur Gluten Free Chocolate Cake mix and begin to stir with a wooden spoon or spatula. Stir until well combined. The mixture will still be very dry.
- Add the 3 tablespoons of water, 1 tablespoon at a time, mixing well in between tablespoons of water.
- Dough will still be crumbly when it is ready, be sure you can shape it into a ball. It will pack together nicely.
- Refrigerate for 30 minutes.
- Preheat oven to 350 F.
- Scoop out a heaping teaspoon of dough.
- Roll cookies into a ball. Roll once in powdered sugar, then roll a second time after it has set a few minutes. I work my way through a batch by first rolling each cookie into a ball, then rolling each cookie in powdered sugar, then going back to the the first cookie and roll it in powdered sugar a second time.
- Bake for approximately 10 minutes. The cookies will not completely flatten in the oven.
- Remove cookies for oven, and allow to flatten and set. Then move to a cooling rack once they have firmed up.
- Enjoy these cookies warm or cooled with your favorite holiday beverage!
Notes
These cookies are easy to make, and will surprise everyone when you tell them they are gluten free and vegan! This recipe makes approximately 30 cookies. I use a heaping teaspoon of dough per cookie, but feel free to make these King Arthur Gluten Free chocolate crinkle cookies any size you would like.
