Cook your rice and allow it or chill, or use leftover rice
Heat your oil in a large skillet over medium heat.
Add in frozen peas, carrots, and garlic (or ginger) to frying pan and stir continuously, until tender.
Push the vegetable mixture to the side of your pan or to the outer rim.
Add another tablespoon of olive oil add eggs (or vegan scrambled egg substitute) in the center of the oil and cook as you would a scrambled egg.
Once cooked, mix together carrot, peas, garlic, and eggs (or egg substitute)
Add the rice, coconut aminos, and meat if you are using it to the pan.
Turn the heat down to low and stir frequently to allow everything to heat fully.
